Theme: Indian Cuisines

The food in India has been widely praised for its magnificent use of herbs and spices along with the flavours that vary from region to region and person to person. India is famous for its diverse variety of cuisines. The Explorer Fellowship at IIT Gandhinagar was a perfect opportunity for us to travel across the country and closely observe the richness of Indian culture, politics, geography, economics, architecture and lifestyles. We planned to travel across various states and cities of India, studying their cuisines and food sciences as food is not just for tasting, it is also about safety, nutrition and biodiversity. Through this exploration what we observed is that Chappan and Sarafa Bazar in Indore were the liveliest places for observing the various cuisines. Streets in Kolkata are full of various foodstuffs and it’s exciting to watch how they prepare their dishes and serve. . The streets from Lucknow had finger-licking food. The food in Jaipur had a royal taste. Starting with the Kachori and including the Shankar’s Samosa, makes a perfect duo for the Rajwadi people of Rajasthan. The street food of Mumbai and traveling in its local trains was a great experience. The world-famous chicken Biryani of Hyderabad was the best experience there. The method of cooking makes it unique and delicious and the addition of the spicy potli masala makes it really tasty. From this exploration, we got to learn a lot of new things and also made some mistakes but the best part was the learning from those mistake
